Pumpkin Waffles with Agave Butter and Syrup
Pumpkin pie. Pumpkin bars. Pumpkin roll. Are you tired of pumpkin yet?
Regular followers of "One More Bite" (OMB) know that on more than one occasion I have praised my wife's baking abilities. We are very lucky in our home when it comes to sweets. She makes some sort of desert item almost every weekend. Regular readers also know that our 8 yr. old son Patrick can find his way around the kitchen too. Which brings me back to... the pumpkin.
On Thanksgiving morning as my wife was preparing our turkey dinner and completing her baking (pies, bars,rolls), I managed to scoop away a cup of pumpkin puree and collaborated with Patrick on today's feature. We had discussed making either pancakes or crepes but settled on waffles instead.
Pumpkin waffles with Agave butter and syrup is a healthy semi-homemade kid friendly alternative to traditional waffles. A recipe that your kids will not only enjoy preparing but will enjoy eating as well. Serve with a side of baked turkey bacon and they won't even notice that you've once again out smarted them into eating healthier!
FOOD FOR THOUGHT: Hungry Jack Complete contains egg, milk and wheat products. It may also contain soybean ingredients and therefore is NOT recommended for those with food sensitivity issues. Organic Blue Agave is 25% sweeter than sugar - A little goes along way.
Ingredients: 1 C. Pumpkin puree, 1 box Hungry Jack Complete pancake/waffle mix, eggs, 1-1/4 C. Blue Diamond Almond milk, 1/4 teaspoon cinnamon, 1/4 teaspoon allspice, 1/4 teaspoon vanilla, 1/4 C. vegetable oil, 1 stick butter, 3 T. Organic Blue Agave.
Directions: (1) Pre-heat waffle iron. (2) In a large mixing bowl( following directions on the box) combine batter mix, dry ingredients and pumpkin. Substitute Almond milk in place of water. Mix thoroughly until lumps disappear. (3) Bake in hot waffle iron until steaming stops and waffle is golden brown. (4) Agave butter is made by softening butter in microwave, NOT melting, and combining with 1 T. Organic Blue Agave. Place into small candy molds and freeze until set. Remove from mold and slice into even servings using an egg slicer. Drizzle waffles with remaining Agave. Add butter and enjoy.
